Cuckoo & Dough
Here are my quick sketches for your brand. It was quite interesting to create them, I like the task!
In the sketch, I focused on the character's shape and fonts. Details and styling are a longer process.
I thought about creating a character - a bird (now it looks more like a parrot, but this is fixable), as a young man, so more elongated and long body, to get far away from the "child" shape. He is friendly, cheerful, but in the evenings he loves to talk with friends about "the important". From this, I was inspired to create stickers, about them below.

It seems to me that your style is best suited by a simple but confident palette. For example, red and black / red and yellow / yellow and black, but with plenty of empty space (white) to be lighter and more graphic style. The lines are clear and straight, but at the same time there is texture and interesting details.

This is a good way to promote among your target audience. People will stick it to their laptops, load photos on Instagram and tell friends about it. You can do this as a gift if a customer bought 4 or 5 coffee.
In addition, it will help to better reveal the "character" of your institution. There you can add specialties, interior chips and various actions that birds (visitors) like to do in your cafe.
