Place a layer of plastic wrap between your ice cream and the lid for extra protection.

Air is also responsible for freezer burn, which desiccates the ice cream surface and crystallizes it. A tight lid helps, but harm can also be done by air trapped inside the jar for long periods. Try moving it to a smaller tub while you consume some of your ice cream. Less ambient air in smaller containers, means less chance of freezer burn.
