The tree belongs to medium-sized olives. Has a dense and compact crown.

The leaf is green-gray in color.

Fruits weigh 4-8 g. A distinctive feature of this variety is the elongation at the end of the fruit. The color after full maturation is black-violet.

The variety is used for making butter and also for marinade.

There is a lot of oil, and it is of very high quality.

The pollinators of this variety are Itrana, Picholine, Maurino and Pendolino.

Carolea olive belongs to frost-resistant varieties and can withstand temperatures down to -10 degrees.
