Keto Chocolate almond pudding with avocado

I eat this chocolate almond avocado pudding whenever I want something sweet and it never gets boring! Toasted coconut flakes and sliced almonds always give this pudding a special crunch. Who doesn't like crunchy pudding ?!

This recipe is great for the weekend. I love to cook it in the morning, put it in the fridge and enjoy it after dinner! Enjoy this keto pudding on the day of preparation or the next day.

Ingredients for 3 servings

unsweetened almond milk - 1 glass
coconut cream - 1 cup
a mixture of stevia and erythritol - 3 tbsp
pitted and peeled avocado - 1 pc
unsweetened cocoa powder - 3 tbsp
vanilla extract - 1 tsp
almonds - 1 tsp
unsweetened coconut flakes for decoration - 2 tablespoons
almonds for decoration - 2 tablespoons

Steps. Cooking 5 min.

1.Collect and prepare all ingredients.

2.Place almond milk, coconut cream, stevia and erythritol mixture, avocado (pitted and peeled), unsweetened cocoa powder, vanilla, and almond extract in a blender. Whisk with a blender until well combined.

3.Divide into serving cups and cover. Refrigerate for 5 hours or overnight, then sprinkle with coconut and almonds on the chocolate pudding before serving. Enjoy!

Each serving contains 334 calories, 29.8 g fat, 6.6 g net carbs, and 5.6 g protein.
