Ribeye keto steak in the oven with vegetables

Ingredients for 4 servings of ribeye steak with vegetables

450 g broccoli
1 head of garlic
275 g cherry tomatoes
3 tablespoons olive oil
1 tablespoon dried thyme, or dried oregano, or dried basil
650 g meat for ribeye steak
salt and pepper

Anchovy oil

30 g anchovies
150 g butter at room temperature
1 tablespoon lemon juice
salt and pepper

Steps.

1.Make anchovy oil. To do this, finely chop the anchovy fillet and mix it with room temperature butter, lemon juice, salt and pepper.

2.Preheat oven to 225 ° C. Remove the meat from the refrigerator beforehand so that it is at room temperature before you start cooking it. Divide the garlic into wedges, but do not peel them. Disassemble the broccoli into inflorescences and cut them, the stems can be left, it is enough to remove the rough parts.

3.Grease a large skillet with oil and arrange all vegetables in one layer. Season and drizzle with olive oil and place in the oven for 15 minutes.

4.Brush the meat with olive oil and season with salt and pepper. Sear the steaks quickly in a skillet over high heat. The meat should have a pleasant, browned crust.

5.Remove the skillet from the oven and prepare a place among the vegetables for the meat.
Reduce the temperature to 200 ° C and place the skillet back in the oven for 10 to 15 minutes, depending on whether you like the rib eye, medium or full.

6.Remove the dish from the oven and place a spoonful of anchovy oil on each piece of meat. Serve the dish immediately!

Advice!

You can also prepare this dish with pork, chicken or fish. At the same time, adjust the cooking time in the oven accordingly. This dish goes well with crispy fresh salad.
