Crispy pork keto salad

A delicious salad filled with crispy pork belly, blue cheese, candied walnuts and fresh pear. This salad is very tasty and satisfying.

This pork salad is perfect for a weekend lunch, a fresh summer dinner, or as a holiday meal if friends are visiting. They will definitely love this salad!

Alternatively, try this salad with your favorite keto salad dressing. If you want to make this salad quickly, you don't need to caramelize the walnuts, but it shouldn't take long at all and will give the salad a nice crunchy flavor and sweetness. In my opinion, it's worth it.

Ingredients for 1 serving

pork slices (brisket) -65 g
pear -½ pcs
walnuts (kernels )-10 g
blue cheese -20 g
water -½ tsp
stevia -½ tbsp
dijon mustard -½ tsp
whole grain mustard -½ tsp
white wine vinegar -1 tbsp
olive oil -1 tsp
greens -30 g
salt -1 tsp

Steps 35 min.

1.Turn on the oven.

2.Take the pieces of pork and cover with 1 teaspoon of olive oil, and season with plenty of salt on both sides. Cook in the oven until golden brown and crispy. Approximately 20-30 minutes.

3.While the pork is cooking, cut the walnut kernels into small pieces.

4.Heat a skillet over medium heat and add water and stevia to it. Wait for the stevia to dissolve and add the chopped walnuts. Cook for about 5 minutes, until the liquid thickens and caramelises on the nuts. Place the nuts on a baking sheet to cool.

5.Cut the cheese and pear into small pieces and set aside.

6.Make the dressing by adding the mustard, white wine vinegar, and olive oil to a small bowl and whisk or stir with a fork until it thickens and blends.

7.Remove the crispy pork from the oven and let cool, then cut into slices.

8.Toss the salad greens with the dressing and sprinkle with chopped pork breast, nuts, blue cheese, and pear. Enjoy!
