Strawberry keto mousse.

Gluten free / sugar free / milk free

Here's a recipe for strawberry keto mousse that can be prepared in just 7 minutes with 4 ingredients. This light and airy dessert is dairy and egg free.
The mousse uses coconut cream, which makes it low in carbohydrates while maintaining a creamy texture and creamy taste! This wonderful summer dessert will look great at a dinner party. I checked it out on my own experience!

Ingredients for 6 servings of strawberry mousse

1 cup (240 g) canned coconut cream *
300 g peeled strawberries
1.5 teaspoon gelatin powder
3 tablespoons cold water
2 tablespoons of powdered sweetener (or more, to taste)
1 tablespoon lemon juice (optional)

Steps. Cooking 7 minutes

1.Place the gelatin in a pot of cold water and leave to soften for 5 minutes.

2.While the gelatin is softening, peel the strawberries and grind them until smooth with a blender.

3.Add powdered sweetener to a pot of gelatin. Heat the mixture slightly to dissolve the gelatin and sweetener in the water. Don't boil the mixture!

4.Add coconut cream, gelatin and sweetener mixture to mashed strawberries and stir until smooth. Add lemon juice to the mixture if desired. Adjust the amount of sweetener in the dessert to your liking.

5.Pour the mousse into dessert cups and chill in the refrigerator for at least 5 hours or until hardened.

Cooking tips

The recipe is for 6 servings of strawberry keto mousse, about 100 g each.

Dessert can be kept in the refrigerator for 3-4 days and should not be frozen.

You can use both fresh and frozen strawberries in the recipe.

If you prefer, you can substitute whipped milk cream or mascarpone cheese for the mousse when making the mousse.
