Zucchini keto noodles (for the lazy;)

This is probably one of the easiest keto noodle recipes. The most delicious thing about this dish is that it is delicious, hot and satisfying!

Ingredients for 2 servings of zucchini keto noodles

2 medium zucchini

160 ml coconut cream

2 teaspoons pesto sauce

salt and pepper to taste

Steps

1. Cut the zucchini into thin strips using a vegetable cutter or slicer.
2. Dry the zucchini strips with a paper towel to absorb excess moisture. I also prefer to split them in half for easier handling and easier eating!
3. Heat the coconut cream in a large skillet over high heat. Once bubbles start to form around the edges, reduce the heat to medium and add the pesto sauce, salt and pepper.
4. Add the courgette noodles and stir well with the sauce. Cook for about 2 more minutes. Be careful not to overcook the dish.
5. Serve zucchini noodles as a side dish or as a light lunch. Bon Appetit!

Advice!
