Keto tiramisu pudding

Ingredients for 5 servings

Chocolate layer

240 ml Almond milk (or coconut milk)
14 grams of cocoa powder (2.5 tsp)
30 ml freshly brewed coffee (can be replaced with 1/2 tsp instant coffee)
40 g Erythritol (can be replaced with a mixture of sugar substitutes), you can also not add sugar substitutes at all
32 g Chia seeds (4 tsp)

Vanilla cream

120 ml Almond milk (or coconut milk)
20 g Erythritol (can be replaced with a mixture of sweeteners), you can also not add sugar substitutes at all
4 g vanilla extract (1/2 tsp)
24 g Chia seeds (3 tsp)
45 ml Whipped cream (3 tablespoons) or coconut cream

Top (tiramisu) layer

2 pcs Chicken yolks (can be removed from the recipe)
40 g Erythritol (can be replaced with a mixture of sweeteners), you can also not add sugar substitutes at all
60 gr mascarpone cheese
240 ml Whipped cream (glass) or coconut cream
1 tbsp cocoa powder for garnish
25 gr dark chocolate (shavings) for garnish

Steps. Preparation 50 minutes

1.To make the chocolate layer, combine 1 cup warm almond or coconut milk, cocoa powder, coffee and sweetener. Add 4 tablespoons of chia seeds and leave to thicken for 15-20 minutes.

2. To make the vanilla cream layer, combine 1/2 cup warmed almond or coconut milk, sugar substitute, and vanilla extract. Add 3 tablespoons of chia seeds and leave to thicken for 15-20 minutes. Add 2 tablespoons of whipped cream or coconut cream.

3. To make a layer of tiramisu cream, place the egg yolks, substitute sugar and vanilla extract in a heat-resistant bowl. Whisk the mixture until pale cream. Place the bowl in a pot of boiling water. Reduce heat and simmer for 5-7 minutes, stirring constantly, until the mixture is lighter, larger and slightly frothy.

4. Remove from heat. Add mascarpone to the whipped yolks, beat until smooth.

5. In a separate bowl, beat heavy cream on high speed until stiff peaks form. Gently add the mascarpone yolk mixture to the whipped cream.

6.To collect the cans, divide the chocolate layer between 5 cans, followed by the vanilla layer. Lay a layer of tiramisu on top, then sprinkle with cocoa powder and add the grated dark chocolate.
